You can purchase a control panel overlay here for $50 plus $10 shipping. These are not originals, but it looks like they might be of decent quality.
To buy an upright or sit-down Sinistar, check eBay regularly. I seem to see about one for sale weekly or every other week. You can check the completed items history on eBay to see what they are going for. It seems to be $500 for one that is in decent shape. A Sinistar that is in very good or excellent shape can go for $700 - $1000+.
If you don't want to own the real thing, but just want to play it on your PC or Mac, you can get the Williams Arcade Classics. Williams Arcade Classics has been DISCONTINUED as of sometime around July 1999. I have also seen them for sale on eBay. They tend to go for about $7. If you do buy one off of eBay, make sure it is the right version. They came out with versions for the Playstation 2, PC, and about five other systems.
You can also check on Rec.Games.Video.Aracade.Collecting newsgroup. The collectors will sometimes sell them cheaper than eBay, but it may be a long wait before someone posts one to the newsgroup.
